Every morning your chef at CJ’s restaurant in Kaanapali carefully prepares our house made Hollandaise Sauce. Though we serve our homemade Hollandaise Sauce over traditional Eggs Benedict every day, on Mother’s Day we offered additional Eggs Benedict variations with a Crab Cake Benedict or a Volcanic Ahi Benedict. For non meat eaters, my Spinach Tomato Artichoke Benedict will be just what any vegetarian on Maui is looking for!

Eggs Benedict with a Classic Hollandaise Sauce Recipe

Classic Hollandaise Sauce Ingredients:

  • 4 Pasteurized Egg Yolks
  • 1 tablespoon Freshly Squeezed Lemon Juice
  • 1 tablespoon White Vinegar
  • 1 tablespoon Water
  • 1 tablespoon Worcestershire Sauce
  • 1/2 cup unsalted butter, melted (1 stick) in Microwave 1.5 minutes
  • Pinch Cayenne Pepper or Paprika
  • Pinch Salt
  • Pinch White Pepper

Tools
Double Boiler (Sauce Pot with mixing bowl on top)
Microwave or melt butter on the stove
Sauce Pot for reducing liquid
Whisk

Preparation

  1. In Sauce Pot Reduce: Vinegar, Lemon Juice, Water and Worcestershire Sauce to half (3 min)
  2. Add liquid to mixing bowl with Egg Yolks
  3. Vigorously whisk the Egg Yolks and Liquid together in a stainless steel bowl over a saucepan containing barely simmering water (or use a double boiler,), until the mixture is thickened and doubled in volume. (The water should not touch the bottom of the bowl, leave space for steam)
  4. Continue to whisk the Egg Mixture rapidly. Be careful not to let the eggs get too hot or they will scramble.
  5. Slowly drizzle and mix in the melted butter (Leave the separated water in the butter at the bottom)
  6. Continue to whisk until the sauce is thickened and doubled in volume.
  7. Remove from the stove: Taste- Whip in Cayenne, White Pepper and Salt.
  8. Cover and place near stove until ready to use for the eggs benedict
  9. If the Hollandaise gets too thick, mix in a few drops of warm water before serving.

Eggs Benedict Recipe by Maui Chef Christian Jorgensen

Eggs Benedict Ingredients 

  • 2 Each Crab Cakes, Bacon, Ham or Spinach Tomatoes or Asparagus
  • 2 English Muffins, Split
  • 1/4 Cup White Vinegar (Poaching Water)
  • 4 Eggs
  • Hollandaise Sauce,
  • Paprika Sprinkle for garnish
  1. Fill a skillet half full of water. Add White Vinegar to the cooking water.
    (This will make the egg white cook easier, and keep in shape)
  2. Bring to a slow boil. Gently break the eggs into the water taking care not to break it.
  3. Reduce the heat to a gentle simmer.
  4. Cook 3 to 3 ½ minutes: Until the egg white is perfect and yolk remains soft.
  5. Remove with a slotted spoon, making the egg drain.
  6. To assemble: Lay Topping on top of toasted English Muffin, followed by Poached Egg.
  7. Poor Hollandaise over the eggs.
  8. Garnish with Sprinkle of Paprika

Serves 2 to 4

  • Get the egg yolk and butter to the same temperature
  • Using a double boiler over gentle heat avoids making scrambled eggs because the heat is too high
  • Whisking in figure eight allows maximum air into mixture
  • Use the freshest eggs you can find for Poached Eggs

To ensure the poached eggs for your favorite Eggs Benedict are up to par with the home made hollandaise by using fresh eggs. The whites of older eggs won’t stay together as well as fresh eggs when you add the eggs to the swirling water for poached eggs. Not sure how to do that? Wonderful for a Sunday Brunch since you can order breakfast until 11:00am! Had a ‘custom’ 3 ingredient omelette (I chose mushrooms, feta and spinach) with nicely crunchy on the outside and soft inside home potatoes, yummy. Hubby had the pancakes with fresh fruit! These are light fluffy slightly sweet batter pancakes, not those heavy bland ones (OK I admit it, I had to have a few bites of his breakfast…) Service was fast and friendly :0). The menu is EXTENSIVE, we live here and love it!

Fact: CJ’s Maui onion soup will melt your face off it’s so good. Best I’ve ever had. It gets 20 stars.
Alas, it’s not on the menu every day… But when my fiancee and I went this past summer and were lucky to meet Chef CJ in person and mentioned that we had been thinking about the onion soup since the last time we visited two years earlier, he was kind enough to put it on the next day’s menu. We went back the following day and ordered it, and it was amazing, just as we had remembered. Another fact: the onion soup at CJ’s is better than the onion soup at Mama’s Fish House (and at like 1/4th of the price). Really. It’s that good. Part of me wants to reverse engineer CJ’s onion soup recipe, quit my job, and make millions selling onion soup to the mainland masses! (or: CJ, wanna make a deal?)
I think that the loco moco gravy is made from the same goodness. So that’s great too. The potato salad is tasty as well.
The to-go lunch plate is respectable.

Maui Chef CJ Prepares Mushroom Soup for Kaanapali Restaurant Guest

On a previous visit to Maui, I had the most delicious mushroom soup at CJ’s Deli and Diner in Kaanapali. When I arrived in Maui this week, I emailed the restaurant and asked what day they might have the soup. The owner and chef, Christian Jorgensen (CJ), promptly replied even though he was on vacation in Vegas. He gave me a number to call to check on the soup of the day. Then when he returned to Maui on Friday, he emailed me to let me know he would have the soup for me on Saturday. When I got there, he was so friendly and the soup was even more scrumptious than I had remembered. I really appreciated how valued he made me feel as a customer.

Aloha, We were in to see you many times during our stay last month in Ka’anapali, couple of things for you:
Need to order some more of your CJ’s roasted Kona Coffee. I see it’s not yet on your website, only the Maui Coffee Co. stuff. We ran out last weekend and are having withdrawls, please help!! Need 2 bags urgently!!
Secondly, your claim about having the best corned beef hash on the island. I think you’ve understated this because it’s the best I’ve had any where in the world! And that covers a lot of ground as I’ve been to every continent multiple times. Just the best anywhere, period!! Don’t suppose you would have that for delivery to Indiana would you? Maybe by the pound(s)?
Great people and even better food, Mahalo CJ’s. Seriously though, please let me know about that coffee. How do we get some ordered and shipped to Indiana?

​CJ’s Deli & Diner Rocks! Been here several times while visiting Maui – each time we tried different meals and each time we LOVED the food, service and atmosphere. Only suggestion would be to provide regular dinner napkins along with this paper type – because we’re messy!
